Black Bean Burrito

Yield: 4 servings

Ingredients:

• 1.5 cups black beans, dry or 4 cups, cooked

• 1 cup salsa

• 2 teaspoons chili powder

• 1 bunch green onions, sliced

• 1 cup cilantro, chopped

• 1 cup frozen corn, thawed

• 4 whole wheat tortillas

• ¾ cup light cheddar cheese, shredded


Directions:

  1. Preheat oven to 350°F.

  2. Cook black beans according to pulse cooking instructions. Drain.

  3. Heat a pan over low heat. Add beans, salsa, and chili powder. Stir to combine. Allow to warm through.

  4. Lay tortillas flat. Portion a quarter of the bean mixture onto each tortilla. Sprinkle half of the cilantro, green onions and cheddar cheese on top of the bean mixture.

  5. Roll tortillas into burritos. Sprinkle the remaining half of the green onions and cheddar cheese on top of the burritos.

  6. Place burritos on a baking sheet. Bake until cheese is melted, about 10 minutes.
