Ingredients:
• 1 cup split peas, dry
• 6 cups water
• 1 bay leaf
• 3 strips bacon
• 2 tablespoons canola oil
• 1 medium onions, chopped
• 1 medium carrots, chopped
• 2 celery stalks, chopped
• 1 tablespoons garlic, minced
• ½ cup fresh parsley, packed
• 1 tablespoon dried sage
• ½ teaspoon salt
• Black pepper to taste
Directions:
Combine split peas, water and bay leaf. Bring to a boil. Reduce heat and simmer until split peas puree, about 40 minutes. Add more water as necessary.
Cook bacon strips over medium heat. Remove from pan and chop into pieces.
Heat oil in another pan over medium heat. Add onions, carrots, celery and garlic. Sauté until onions are transparent.
Add bacon, vegetable mixture, parsley, sage, salt and pepper to split peas. Stir to combine. Simmer for another ½ hour.
Remove soup from heat. Allow to cool slightly. Puree with immersion blender until smooth.
