Savory Red Lentil Chili

Ingredients:

· 1.5 cups red lentils, dry

· 500 g or 5 medium hot Italian sausage

· 1 tablespoon canola oil

· 1 small onion, chopped

· 2 tablespoons garlic, minced

· 1 ½ tablespoon chili powder

· 2 teaspoon cumin

· 2 teaspoon oregano

· Black pepper to taste

· 1 796 mL can diced tomatoes

· 1 large sweet potato, diced

· 3 cup water Directions:

1. Heat a pan over medium heat. Add sausage. Cook until browned. Remove sausage from pan and slice thinly.

2. Heat oil in a pot over medium heat. Add onion, garlic and spices. Sauté for 2 minutes, stirring frequently.

3. Add lentils, diced tomatoes, sweet potato, sausage and water. Bring to a boil over medium heat. Reduce heat to low, cover, and simmer until sweet potato is tender, about 40 minutes.

4. Add water and adjust seasoning if necessary.
