Ingredients:
• 1 cup red lentils, dry
• 1 Large tortilla
• 3 tbsp basil pesto
• 1 cup artichoke hearts, chopped
• 1 cup roasted red peppers, chopped
• ½ cup part-skim mozzarella cheese, shredded
• Fresh ground black pepper to taste
Directions:
Preheat oven to 350°F.
Cook red lentils according to pulse cooking instructions. Drain.
Place tortilla in oven, on baking sheet. Toast until lightly golden.
Mix 3 tablespoons of pesto and 3 tablespoons cooked lentil.
Spread mixture evenly onto tortilla. Distribute artichoke hearts and roasted red peppers on top of lentil mixture. Sprinkle mozzarella cheese over pizza.
Return pizzas to oven. Toast until cheese melts.
