Ingredients:
· 5 cups chickpeas, cooked
· 1 tablespoon olive oil
· 1 small onion, chopped
· 1 jalapeno pepper, minced
· 1 teaspoon curry powder
· 1 tablespoon garlic, minced
· 1 can light coconut milk
· 1 ¼ cup low-sodium vegetable broth
· ½ teaspoon salt
· 1 bay leaf
· ½ cup brown rice, dry
· 1 cup cold water
Directions:
1. Prepare 4 servings of brown rice according to package directions.
2. Heat oil in a large pot over medium-high heat. Add onion, jalapeno pepper and curry powder. Sauté until onion is translucent.
3. Add garlic and sauté for 1 minute more.
4. Add coconut milk, vegetable broth, chickpeas, bay leaves and salt. Stir to combine. Reduce heat and simmer for 20 minutes.
5. Remove bay leaf. Add rice to chickpea mixture. Stir to combine.
