Multigrain Lentil Pilaf

Ingredients:

· 1.5 cups lentils, dry

· 2 tablespoons canola oil

· 2 cloves garlic, chopped

· 1 medium onion, chopped

· ½ cup almonds, sliced

· ¼ cup brown rice, dry

· ¼ cup barley, dry

· ¼ cup wild rice, dry

· 3 cups low-sodium vegetable broth

· 1 tablespoon no-salt seasoning (such as garlic herb)

· ½ teaspoon salt

Directions:

1. Preheat oven to 350°F.

2. Cook lentils according to pulse cooking instructions. Drain.

3. Heat oil in a pot over medium-high heat. Add onions and garlic. Sauté until onions are translucent.

4. Add vegetable broth, seasoning and salt and allow to reach boiling point.

5. Add almonds, brown rice, wild rice and barley and boil until cooked.

6. Add lentils. Stir to combine.

7. Put on low heat and allow water to dry up.
