Field of Dreams Lentil Salad

Ingredients:

· 3 cups lentils, cooked

· 1 cup tomato, chopped

· ½ cup cucumber, chopped

· 2/3 cup corn, frozen

· 2 tablespoon red onion, diced

· ½ cup fresh parsley, finely chopped

· 4 tablespoons light cheddar cheese, shredded

· 4 tablespoons light balsamic vinaigrette

· 2 tablespoons olive oil

· 2 cup salad greens


Directions:

  1. Combine lentils, tomato, cucumber, corn, red onion, parsley, cheddar cheese, and salad greens in a bowl.

  2. Mix vinaigrette and olive oil together and pour over the rest of the ingredients. Mix well.
