Tangy Lentil Salad

Ingredients:

  • 2 cups red lentil, cooked

  • 2 tablespoon fresh dill, chopped

  • ½ teaspoon Dijon mustard

  • 2 tablespoon fresh lemon juice

  • Pinch of salt

  • Fresh ground black pepper to taste

  • 1 tablespoon olive oil

  • ½ cup red bell pepper, diced

  • ½ cup cucumber, diced

  • 2 tablespoon red onion, minced

  • 3 tablespoon feta cheese, crumbled

  • 2 cup romaine lettuce, shredded


Directions:

  1. Combine dill, mustard, lemon juice, salt and pepper in a large bowl. Gradually whisk in olive oil.

  2. Add lentils, bell pepper, cucumber, onion, feta cheese, and lettuce.

  3. Toss to coat.

Cooking tips:

  • Place cooked lentil in the refrigerator to cool before combining other ingredients.
