2 cups red lentil, cooked
2 tablespoon fresh dill, chopped
½ teaspoon Dijon mustard
2 tablespoon fresh lemon juice
Pinch of salt
Fresh ground black pepper to taste
1 tablespoon olive oil
½ cup red bell pepper, diced
½ cup cucumber, diced
2 tablespoon red onion, minced
3 tablespoon feta cheese, crumbled
2 cup romaine lettuce, shredded
Directions:
Combine dill, mustard, lemon juice, salt and pepper in a large bowl. Gradually whisk in olive oil.
Add lentils, bell pepper, cucumber, onion, feta cheese, and lettuce.
Toss to coat.
Cooking tips:
Place cooked lentil in the refrigerator to cool before combining other ingredients.
