Summer Chickpea Salad

Yield: 4 serving

Ingredients:

• 3 cups chickpeas, cooked

• 8spears asparagus

• 3 cup baby spinach

• 1 cup blueberries

• 1 ½ cup strawberries, halved

• 4 tablespoons fresh mint, finely chopped

• 2tablespoon extra-virgin olive oil

• 2 tablespoon apple cider vinegar

• 1 tablespoons honey

• Pinch of salt


Directions:

1. Bring a pot of water to the boil. Cook asparagus until tender. Drain and chop into pieces. Allow to cool.

2. Combine chickpeas, asparagus, spinach, blueberries, strawberries, and mint in a bowl. Mix well.

3. Whisk olive oil, vinegar, honey and salt together in a small bowl.

4. Combine salad dressing and portion out salad
