Ingredients:
· 3 cups lentils, cooked
· ½ cup brown rice, dry
· 1 cup water
· 1 cup cherry tomatoes, halved
· ½ bunch green onions, chopped
· 2 tablespoon canola oil
· 2 tablespoon cider vinegar
· 1 tablespoon honey
· ¼ teaspoon cinnamon
· Pinch of salt
Directions:
Combine brown rice and water in a pot. Bring to a boil. Reduce heat and simmer until cooked.
Combine lentils, brown rice, tomatoes, and green onions in a bowl. Mix well.
Add oil, vinegar, honey, cinnamon and salt. Toss to coat.
Refrigerate before serving
