Ingredients:
· 5 cups lentils, cooked
· ½ cup brown rice, dry
· 1 cup water
· 1 cup cherry tomatoes, halved
· 1 cup cucumber, diced
· 1 bell pepper, diced
· 1 bunch green onions, diced
· ½ cup fresh parsley, finely chopped
· ½ cup Italian salad dressing
· 2 cups romaine lettuce
Directions:
Combine brown rice and water in a small pot. Bring to a boil. Reduce heat and simmer until cooked.
Combine lentils, rice, tomatoes, cucumber, bell pepper, romaine lettuce, green onions, and parsley in a large bowl.
Pour dressing over ingredients and mix until evenly coated.
