Ingredients:
• 4 cup split peas, cooked
• 1 cup brown rice, cooked
• 4 small carrots, grated
• 4 stalk celery, sliced
• 1 cup red bell pepper, diced
• 4 tablespoon green onion, sliced
• 4 teaspoon garlic, minced
• 2 tablespoons ginger, minced
• 6 tablespoons light Italian salad dressing
• 1 tablespoon sesame oil
• 1/3 cup Chow mein noodles, dry and crushed
Directions:
1. Prepare brown rice and split peas according to package directions. Allow them to cool.
2. Combine split peas, rice, carrot, celery, bell pepper, and green onionin a bowl.
3. Whisk salad dressing, sesame oil, garlic, and ginger together in another bowl.
Refrigerate. When ready to serve add crushed chow mein noodles
