Ingredients:
3 cups chickpeas, cooked
3 tablespoons olive oil
1 ½ tablespoon lime juice
¼ cup cilantro, chopped
1 teaspoon cumin
¼ teaspoon salt
Black pepper to taste
½ red bell pepper, diced
1 cup corn, frozen
¼ cup red onion, chopped
½ jalapeno pepper, seeded and minced
Directions:
1. Whisk olive oil and lime juice together in a small bowl.
2. Add cilantro, cumin, salt and pepper and whisk to combine.
3. Combine chickpeas, corn, onion, bell pepper and jalapeno in a large bowl.
4. Pour dressing onto salad and toss to coat.
5. Portion out salad.
6. Refrigerate.
