Ingredients:
• 4 cups lentils, cooked
• ½ cup whole wheat orzo pasta, dry
• 2 tablespoon olive oil
• 1 ½ tablespoons red wine vinegar
• 1 teaspoon garlic, minced
• 1 cup cherry tomatoes, quartered
• ¼ red onion, diced
• ½ cup olives, pitted and chopped
• ¼ cup fresh dill, chopped
• ½ cup light feta cheese, crumbled
• Black pepper to taste
Directions:
Bring a pot of water to the boil. Add orzo. Cook until al dente and drain.
Whisk olive oil, canola oil, red wine vinegar, garlic, salt and pepper together in a small bowl.
Combine lentils, pasta, tomatoes, red onion, olives, dill and feta cheese in a large bowl.
Pour dressing onto salad and toss to coat.
