Stuff it in a Pita Lentil Salad

Ingredients:

· 4 cups lentils, cooked

· ½ cup bell pepper, chopped

· ½ cup cucumber, chopped

· 3 tablespoon light feta cheese, crumbled

· 1 ½ cup salad greens, chopped

· 2 tablespoon light balsamic vinaigrette

· 1 tablespoon olive oil

· 2 whole wheat pita bread, cut in half and opened

Directions:

  1. Combine lentils, salad greens, bell pepper, cucumber, olive oil and balsamic vinaigrette in a bowl. Mix well.

  2. Top with feta cheese.

Serving suggestion

  • Portion out salad and stuff it in a pita.
